The Best Pumpkin Pie in Ashburn, VA

With Thanksgiving around the corner, you may be thinking more about selling your family and friends on the dining room table spread than any other part of your home. If you’ve got a good turkey, stuffing, cranberry sauce and mashed potatoes, that’ll take you most of the way to getting a high appraisal from your guests. But the key is in the closing. Which in this case, is the pumpkin pie. It’s easy to dismiss since it’s the last item on the menu, but it’s the one that everyone will remember – for better or for worse. Here’s a surefire recipe guaranteed to close the deal with your Thanksgiving guests.

Crust:
2 cups sifted all-purpose flour
2 teaspoons sugar
1 teaspoon salt
1/2 to 2/3 cup salad oil
3 to 4 tablespoons milk

Filling:
One 15-ounce can unsweetened pure pumpkin puree (about 2 cups)
3/4 cup packed light brown sugar
3 eggs, lightly beaten
1 1/4 cups half-and-half
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/4 teaspoon freshly ground nutmeg

Directions:

Into a 9-inch pie plate, sift together the flour, sugar, and the salt. In a glass measuring cup, whisk together 1/2 cup salad oil and 3 tablespoons milk with a fork. Pour that over the flour mixture in pie plate and mix with a fork until all flour is evenly dampened. If it is still too dry to work with your hands, mix a little more oil with a little milk and add to flour mixture. With your hands press the dough evenly against the bottom and up the sides of the pie pan. Crimp the edges of the bottom crust or use a fork dipped in milk to flatten the crust along the rim.

Now make the filling. In a large bowl, whisk together the pumpkin, brown sugar, eggs, half-and-half, spices, and salt until smooth. Pour the filling into the pie shell.

Bake on the lower oven rack until the edges of the filling are set but the center is still slightly loose, about 50 to 60 minutes. (If the edges get very dark, cover them with aluminum foil.) Cool on a rack. Serve room temperature or slightly warm.
